Botanical Name: Brassica oleracea L. var. acephala
Other Names: Curly Kale, Boerenkool, Farmer's Cabbage, Black Cabbage, Tuscan Cabbage, Cavolo Nero, Collard, Borecole, Tuscan Kale, Laciniato, and Dinosaur Kale.
Kale is a dark green, leafy vegetable that is part of the cabbage family. In addition to dark green, kale is also available in a variety of other colors such as purple, white, and even pink.
Like other dark green leafy vegetables, kale is high in calcium, iron, beta carotene, and vitamin C. Kale is part of the cruciferous group of vegetables (along with cabbage, cauliflower, broccoli, and others), which have been studied for their cancer fighting properties. Kale is also a good source of dietary fiber and an excellent source of vitamin A (in the form of carotenoids), vitamin K, and manganese. It is a very good source of copper, tryptophan, vitamin B6, and potassium; and a good source of magnesium, vitamin E, vitamin B2, protein, vitamin B1, folate, phosphorous, and vitamin B3. Also worth noting in kale's nutritional profile is its vitamin K content. Kale contains nearly twice the amount of vitamin K as most of its fellow cruciferous vegetables.
Kale's special mix of glucosinolates has been the hottest area of research on this cruciferous vegetable. Kale is an especially rich source of glucosinolates, and once kale is eaten and digested, these glucosinolates can be converted by the body into cancer combating compounds.

I used to do the beet powder and kale powder but checked out nutrient value and Kale seems to have the edge. Mountain maus is always prompt and accurate in getting my orders to me. I would recommend them whole-heartedly.

Orders always delivered timely. Good pricing and personal responses to questions when needed. Powder is very palatable when I press miss quart and keep it refrigerated which lasts 3 servings then I do it all over. I use about 6 tblsps per quart and shake well before pouring.

I said OK because Kale is, well, Kale. I had some before this that was not pleasant tasting. This was different.... not unpleasant and bordering on good! Probably if I mixed it with some frozen strawberries or pineapple it would be even better but compared to a previous supplier, this stuff is great! I only ordered 1 lb along with 2 lbs of the beet powder. I'll be ordering more soon! As for the physical benefits, I've found it doesn't happen overnight. It's being consistent with a regimen that yields results so I'll let you know more in a month and if you don't hear from me, it's probably a good thing! BTW I just mix it with filtered water, stir it in thoroughly, put a couple of ice cubes in and drink it chilled.
